Grass-fed beef gelatin contains collagen type I and III. Type I collagen is the most plentiful collagen in the body and accounts for 80-90% of the entire collagen amount. Type III collagen is very similar to type I as they share many overlapping benefits such as promoting skin, bone, tendon, organ, and gut health. However, once the collagen is hydrolyzed, the separate collagen types are not distinguishable.
The main difference between these two supplements is that gelatin powder is collagen for cooking, commonly used as a natural thickening agent for its gelling quality. Another difference is related to structure, as gelatin is a partially hydrolyzed form of collagen. Collagen peptides dissolve in hot or cold liquid, whereas gelatin can only mix in hot liquids and will return to its gel state once the liquid cools.
